C.W. Worth House Bed and Breakfast Recipe of the Week--Strawberry Bread




This time of year brings wonderful strawberries to South Eastern North Carolina and to our breakfast table here at C.W. Worth House Bed and Breakfast...


Strawberry Bread                                                         Makes 2 loaves
Ingredients:
3 C. Flour
1 t. baking soda
½ t. baking powder
1 t. cinnamon
1 T. vanilla extract
1 ½ C. sugar
4 eggs, well beaten
1 C. canola oil
3 C. fresh sliced strawberries or 2 10 oz. packages, thawed
Preparation:
Preheat oven to 350 degrees
Mix all dry ingredients together with a whisk (except sugar) in a large bowl.
Mix oil, sugar and vanilla together in medium bowl.  Beat in eggs.  Make a well in the center of the dry ingredients and mix in wet ingredients.  Mix until blended.
You may want to drain off some of the juice from the thawed, frozen strawberries.
Gently fold in strawberries.
Grease pans.  For two 9 x 5 x 3 loaf pans, bake for 50-60 minutes.
(Will also make 20 or so muffins.  Bake 20 minutes at 400 degrees.)
